Roasted Corn Chowder Soup

A quick and easy-to-make chowder that is thick and delicious and can be made with corn,  potatoes, or both!





Sausage & Corn Chowder

½ lb. country sausage (mild or spicy)
1 pkg. Roasted Corn Chowder Quick Mix
4 cups milk
1 cup corn (if using canned, drain)
1 bunch green onions (greens only, thinly sliced)

Cook sausage in a skillet until done. Drain on paper towels to remove excess grease and set aside.

In a two-quart saucepan, whisk the Roasted Corn Chowder Quick Mix into the milk. Bring to a simmer, stirring often. Reduce heat and simmer 10 minutes. Add sausage and corn and continue cooking for 3 minutes. Top with green onions.

Loaded Roasted Corn and Potato Chowder

2 cups (about 1 lb.) red skin potatoes (diced)
1 pkg. Roasted Corn Chowder Quick Mix
4½ cups milk
½ cup shredded cheddar cheese
½ cup cooked bacon (chopped)
1 bunch green onions (greens only, thinly sliced)

In a saucepan, add diced potatoes and enough water to cover. Cook until soft. Drain and set aside.

In a two-quart saucepan, whisk Roasted Corn Chowder Quick Mix into milk. Bring to a simmer, stirring often. Reduce heat and simmer 10 minutes. Remove from heat and stir in the potatoes, cheese, bacon, and green onions
