The Burger & Fry Seasoning can be used to season meats, potatoes, and vegetables, and it's particularly good on hamburgers and French fries.
6-8 baby Yukon Gold potatoes (any long narrow small potato will work)
½ cup unsalted butter, melted
Rada Burger & Fry Seasoning
Preheat oven to 425. Scrub potatoes to remove any hard bits from the skin. Slice one thin layer off the length of each potato. This will serve as a solid base while you finish slicing. Place potato flat side down. Using a thin, sharp knife, make slices that are about 1/8-inch apart but do not cut completely through the potato. Carefully fan out sliced pieces without breaking apart. Melt the butter and reserve about 3 tablespoons. Nestle potatoes into a cast iron or heavy skillet. Brush each potato with melted butter, making sure the butter seeps down in between the slices. Sprinkle potatoes evenly with Rada Burger & Fry Seasoning. Bake one hour, basting the potatoes with the reserved butter two to three times while cooking. When done, potatoes should be tender on the inside and crisp on the outside. (Tip: Use chop sticks or something similar on each side of the potato so it will stop you from slicing all the way through).
3 large baking potatoes
3 Tbsp. vegetable oil
2 tsp. Burger & Fry seasoning
Cooking spray, as needed
Preheat oven to 450° F. Heat a baking tray by placing it in a preheated oven. Cut potatoes in half, then, cut each half into 4 wedges. Place the wedges in a large bowl and add oil. Toss to evenly coat. Add Burger & Fry seasoning and toss again. Remove heated tray from oven and coat with cooking spray. Spread the potato wedges on the tray in a single layer and bake for 15 minutes. Remove from oven and flip wedges. Bake an additional 15 minutes until golden brown and crisp. (Serves four.)
